You either loved it or hated it as a kid: Pea soup. Our “thick as fog” pea soup has been known to change minds (we think it’s the bacon). One of our simplest soups to make, just fry up bacon or ham while the soup simmers. Garnish with croutons or chives and try not to change your mind.

Directions: 1) Add package contents to 4-5 C boiling water; simmer, covered, on low for approx 2 hr. 2) Add diced cooked ham or bacon (remove all excess grease to avoid making soup too salty); add meat 15 min before serving. Soup thickens as it cooks (add water if needed to desired thickness). Season with salt and pepper.
