A lightly creamy soup inspired by Thai cuisine, our coconut prawn soup is bursting with flavour and vegetables, like bok choy and bell pepper. Cook it with chicken or prawns, or go vegan-friendly with tofu. Garnish with fresh cilantro—and don’t forget a squeeze of lime!

Directions:
1) In large pot, heat 6 tbsp butter; sauté 1 large chopped onion, 4 cup bok choy, 1 1/2 cup diced bell pepper, 2 cup diced mushroom.

2) Add package contents, 8 cup water, 400ml can coconut milk, 2 cup plain yogurt, juice of 1 lime, 4 tbsp brown sugar. boil then simmer, covered, for approx 70 min.

3) Add 3-5 cup shrimp or prawns, 1/4 c soy sauce, 2 tbsp peanut butter; simmer until prawns are cooked. Season with salt and pepper. Garnish with sesame oil and cilantro.

Option: substitute cooked chicken or steak for seafood.

Add 6 TBSP of butter along with 1 large diced onion, 4 C bok choy, 1.5 C diced bell pepper, 2 C diced mushroom and set to sauté with the lid off for 10 minutes. Stir intermittently until onions are translucent.

Hit cancel. Then add 8 C water, package contents, 2 TBSP brown sugar, 1 TBSP lime juice, and one can of coconut milk. Secure the lid and close the vent, set to SOUP for 20 minutes.

Quick Release then add 2 TBSP peanut butter, 1/4 C soy sauce, 2 C plain yogurt, 3-5 C shelled prawns . Stir well.  Secure lid and close vent and set to SOUP setting for 3 more minutes. 

Quick Release and enjoy! 

Optional: Add sesame oil and cilantro as garnish & salt and pepper to taste.
